Paris-Brest,
dining destination in Rennes

"In a place of transit, succeeding in creating connections,
It's a real victory.
Paul Ruello, Managing Director of Maison Ruello

A RESTAURANT AT THE HEART
OF RENNES STATION

In the heart of Rennes train station, where footsteps hurry along and eyes search for departure time, Paris-Brest has chosen to do the exact opposite. Since 2019, this Rennes restaurant has championed a simple idea: in a train station, everyone should be able to enjoy their moment. Grab a coffee in a few minutes, have a quick lunch, linger at the bar, or settle in for a longer dinner.
As the hours pass, the place changes its rhythm without ever losing its attentiveness. Neither a classic brasserie nor a bistro, Paris-Brest is equally suited to departures and reunions, business lunches and spontaneous get-togethers.
People don't just come here because they're passing through. They come because they choose to stop.
A SIGNIFICANT DECOR
STUDIO JOUIN MANKU
Designed by Patrick Jouin and Sanjit Manku, the space evokes a contemporary pier facing Brittany. Solid oak wood extends to the ceiling, lending warmth and depth, while the terrazzo floors in shades of gray and blue recall the mineral quality of Breton granite. At the center, a large bar structures the space and becomes the beating heart of the restaurant. The result is a modern, elegant, and confident space, far removed from any nostalgia for old-fashioned railway station buffets.

A chef who embodies the identity of the place
Servane Pocard embodies the identity of Paris-Brest with precision and sensitivity.

Having started as a chef de partie, she naturally took over the kitchen and now develops a personal style of cuisine rooted in the Breton terroir. The ingredients are treated with respect, the recipes are clear, and the dishes are designed for every time of day. Among her signature dishes are the poultry, foie gras, and sweetbread pâté en croûte; the confit and caramelized pork belly; and the ever-popular Paris-Brest, generous and intensely praline-flavored.
In the evening, Paris-Brest reveals a different side of itself. At the bar, counter, or table, you can share a plate of food and a glass of wine or champagne in a more relaxed atmosphere. A "finger food & wine" menu will soon be added to enhance this experience and further solidify the venue as a top evening destination in Rennes.
A PLACE TO EXPERIENCE INTO THE EVENING
A kitchen that begins
long before the plate
The Paris-Brest pastry relies on a network of committed Breton producers and artisans. Ty Vorn, Janzé, SDPF, La Ferme de la Lande, Maison Voland, and Maison Bordier are just some of the partners chosen for the quality of their work and the trust built over time. Each product is carefully selected, with a focus on local sourcing and seasonality.

THE SIGNATURE OF THE PLACE?
ATTENTIVE SERVICE
In a station where everything could be anonymous, the team cultivates a rare and deeply personalized attention. Here, people recognize each other, remember each other, and simply ask: "How much time do you have?"
Under the leadership of Fabien Guillemot, the restaurant's manager, the service has become a true hallmark. Constant attention to detail makes you want to return.
For regular customers, the experience goes even further: a table is set, drinks are prepared in advance, and a knife is engraved with their name. The moment they step through the door, the customer is no longer a traveler. They are expected.
